Fruity Kaki Pancakes with Lucuma and Mandarin Jam

Pancake

Blend persimmon (also known as kaki, persimmon, churma) with cinnamon, lucuma, and vanilla in a powerful mixer and spread the mixture onto a dehydrator sheet. Dry at 42 degrees for about 20 hours or until the mixture is perfectly compact, dry and ready for slicing. Use a lid or plate as a template and cut perfect wheels / round shapes.

Jam

Squeeze or juice 7 clementines and mix with agave syrup, then dry in the dehydrator for about 16 hours or until you are satisfied with the consistency.

Assembly

Spread the jam on the pancake, put a few pieces of a mandarin and fold it in quarters. Sprinkle with shredded coconut and pomegranate seeds.
