Creamy Fruity Beetroot Spaghetti

Directions

Spiralize the beetroots and put in a bowl. Marinate in a mixture of almond butter, balsamic vinegar, sea salt and some water. Chop the onion, mango, grapefruit, arugula and thyme and add to the bowl. Garnish with more arugula, thyme and some crushed sweet apricot kernels.
