Directions
Crust
In a food processor, mix 300g pitted dates with the pecan nuts,1 tablespoon cacao powder and 1 teaspoon vanilla powder until smooth. Transfer to a 22cm springform and press the mix into the bottom and the sides of the dish creating edges of about 1 1/2 cm. ⠀
Filling
In a food processor, mix the coconut pulp (you will need about 3 young coconuts depending on how big they are) with the coconut flour, yacon syrup, the juice of 2 oranges and 1 teaspoon vanilla powder.
Chocolate cream topping
In a food processor, mix the coconut water with 100g pitted dates and 1 tablespoon cacao powder.
Decorate with some orange zest and ground cacao beans.
