Grind almonds and cashews until fine. Use 3 tbsp agave syrup, one pinch of salt and 30 ml water. Mix well to create your dough. Set the dough aside while making the topping.
For the chocolate chip topping take 110g cocoa beans, crush them into coarse nibs, add 4 tbsp. agave syrup and 1 tsp. vanilla powder, mix well. Time to finish your cookie!

Form a circle with the dough (20 cm diameter). Cover it with the chocolate chip topping. Put your cookie in the dehydrator until it gets solid. To keep its consistency put the cookie in the refrigerator after dehydrating.
