With Lifefood Apricot Layer Pie you make your loved ones smile. Not only at Christmas times.
In advance
Soak apricots in water for a few hours to simplify the processing. Also the dough of your Apricot Layer Pie must stay in the dehydrator overnight.
Dough
For the dough layer you need 500g almonds, 200g dates, some water and 2 tsp finely chopped or grated orange peel.
First you grind the almonds and puree the dates with some water in your blender. Mix both almonds and dates with some orange peel. Now your dough is ready!
Spread out the dough into 5 thin plates (diameter about 23 cm) and put it in your dehydrator overnight.
Apricot Cream
For the apricot cream you need 500 g soaked dried apricots, 1 tsp cinnamon and 2 tsp agave syrup. Put the pre-soaked apricots together with cinnamon and agave nectar in your blender and let the delicious ingredients become a smooth cream.
Lifefoods Tip: The water from soaking the apricots can be used perfectly for other dishes, like cereals or smoothies!
Cashew Cream
For the second layer of the cream pie you need 700 g truly raw cashews, 300 ml water, 5 tsp agave syrup and 1 tsp grated lemon peel. Quick and easy, you simply put all the ingredients in your blender and puree it until it becomes a smooth cream!
Lifefood Apricot Layer Pie
Layer by layer your creams are now becoming a pie. Start with a layer of dough and put a layer of cashew cream on top. Now again use a layer of dough and add a layer of apricot cream. Go on with this until all your dough layers are used. Done! Your raw Apricot Layer Pie is ready to be eaten. Enjoy every moment. Made with love.

Decorate the top layer of cake with goji berries, orange peel or Lifefood cookies. Any other Lifefood dried fruits are great for decorating. Let your imagination run free!
